- 1/3 cup olive oil
- 3 tablespoon apple cider vinegar
- 3 tablespoons honey
- 2 tablespoons Dijon Mustard
- salt and pepper, to taste

- 4 seedless mandarin oranges
- 12 ounces fresh spring greens
- 2/3 cup pre-sliced almonds
- 2/3 cup feta cheese
- 3/4 cup dried cranberries

Instructions
- In a small bowl, whisk the olive oil, vinegar, honey, mustard, and salt and pepper until thoroughly combined. Set aside.
- Next, peel and segment the four mandarin oranges. Discard the peels. Set aside.
- In a large bowl, add the fresh greens, followed by the mandarin orange slices, sliced almonds, feta cheese, and dried cranberries. Drizzle the honey mustard vinaigrette over the top of the salad, toss to coat, or serve to the side.
