Raw Cider
Ingredients
½ gallon unfiltered apple cider
2 cinnamon sticks
2 whole cloves
2 allspice berries or whole nutmeg
½ orange peel and ½ lemon peel, cut into strips

Instructions
Pour the into a large stainless steel pot (crock pots or
slow cookers are best). Place spices and peels into a cheesecloth.
Drop the cheesecloth into the apple cider. In a regular
pot: Heat to just short of a boil. In a crock pot: Heat
for 2 hours. Remove cheesecloth and serve. Garnish with
a cinnamon stick.
Thanksgiving Champagne Turkey
Ingredients:
1 (14 pound) whole turkey, neck and giblets removed
1/2 cup butter, cubed
2 apples, cored and halved
3 crushed garlic cloves
1/2 cup flour
salt and pepper to taste
2/3 (750 milliliter) bottle champagne

Instructions
Preheat oven to 350 degrees F (175 degrees C). Rinse turkey,
and pat dry. Gently loosen turkey breast skin, insert pieces
of butter between the skin and breast. Place apples inside
the turkey's cavity. Sprinkle with salt, and pepper. Place
turkey, crushed garlic cloves and flour in a roasting bag,
and pour champagne over the inside and outside of the bird.
Close bag, and place turkey in a roasting pan. 3. Bake turkey
2 to 2-1/2 hours in the preheated oven, remove turkey from
bag then return to oven to brown skin (approximately 45
minutes) occasionally basting and until the internal temperature
is 180 degrees F (85 degrees C) when measured in the meatiest
part of the thigh. Remove turkey from oven and let stand
for at least 20 minutes before carving.
Praline
Pumpkin Pie
Ingredients:
1/3 cup chopped pecans
1 cup packed brown sugar
2 tablespoons butter, softened
1 unbaked 9" pie shell, softened
2 eggs, beaten
1 cup canned pumpkin puree
1 tablespoon flour
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp graound ginger
1/2 tsp ground cloves
1/8 tsp ground mace
1 cup evaporated milk

Instructions
Preheat oven to 450°. Combine the pecans, 1/3 cup of
the brown sugar & the butter. Press into the bottom
of the pie shell. Bake 10 minutes. Combine the eggs &
pumpkin. Add 2/3 cup of brown sugar, the flour, salt, spices
& milk. Beat until smooth & creamy. Pour into the
partially baked pie shell. Lower the oven heat to 325°
and bake 45 minutes
